Several people have asked me to post my banana bread. It is a very easy recipe. The magic ingredient that makes it so moist (my daughter hates the word moist!) is sour cream. If you have two loaf pans, make two breads, cause it goes quick!
2 Cups Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1/3 Cup Canola Oil
1 Cup Sugar
2 Large Eggs
5 Tablespoons Sour Cream
1 1/3 Cups Mashed Banana, 3 banana. Over ripe bananas are the best.
Preheat the oven to 350 degrees.
Spray a loaf pan with nonstick spray.
In a large bowl, whisk together the flour, baking soda and salt. Set aside.
In another bowl, whisk together the oil and sugar. Add in the eggs and sour cream and whisk again, do not over mix.
Dump the dry ingredients, bananas, on the wet ingredients and gently fold the ingredients together.
Pour into a bread pan and bake for 50 minutes. Let it cool before cutting.
